Ingredients:
2 lbs baby potatoes, halved
1/2 cup grated Parmesan cheese
1/4 cup olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
Fresh parsley, chopped (for garnish)
Directions:
Preheat Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the Parmesan Mixture:
In a large bowl, combine the grated Parmesan cheese, olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper. Mix well.
Coat the Potatoes:
Add the halved baby potatoes to the bowl with the Parmesan mixture. Toss to coat the potatoes evenly.
Arrange on Baking Sheet:
Place the coated potatoes cut side down on the prepared baking sheet. Ensure they are in a single layer for even baking.
Bake:
Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and the Parmesan crust is golden and crispy.
Serve:
Remove the potatoes from the oven and let them cool slightly. Garnish with chopped fresh parsley before serving.
