Cook the Pasta:
Bring a large pot of salted water to a boil. Add the rigatoni and cook according to the package instructions until al dente. Drain and set aside.
Cook the Beef:
In a large skillet, heat olive oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked. Season with salt and black pepper. Drain any excess fat.
Sauté Garlic and Butter:
Push the beef to one side of the skillet. Add butter to the empty space and let it melt. Add the minced garlic and sauté for 30 seconds until fragrant.
Create the Sauce:
Pour in the beef broth and stir to deglaze the pan, scraping up any flavorful bits. Let it simmer for 2 minutes. Reduce heat to low and stir in the heavy cream, Italian seasoning, and red pepper flakes. Let the sauce simmer for another 3 minutes until slightly thickened.
Add the Cheese:
Stir in the mozzarella and Parmesan cheese, letting them melt into the sauce to create a creamy, cheesy consistency.
Combine with Pasta:
Add the cooked rigatoni to the skillet and toss until fully coated in the creamy, cheesy sauce. Let it cook for 1-2 more minutes, allowing the flavors to meld together.
Garnish and Serve:
Remove from heat and sprinkle with fresh parsley. Serve hot and enjoy this rich and comforting pasta dish!
