1. Prepare the Oven and Baking Dish:

Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking dish with parchment paper, leaving an overhang for easy removal of the bars.
2. Mix the Dry Ingredients:

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger (if using). Set aside.
3. Mix the Wet Ingredients:

In a large bowl, whisk together the oil, granulated sugar, and brown sugar until well combined.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
4. Combine the Wet and Dry Ingredients:
