Ingredients:
2 cups pasta (250 g)
1 teaspoon salt (for boiling pasta)
3 tablespoons olive oil (for frying)
1 onion, chopped
2 cloves garlic, finely chopped
3 chicken breasts, cut into small pieces
3 tomatoes, chopped
Salt and black pepper to taste
2 garlic leeks, chopped
2 tablespoons butter
Salt (for sauce)
1 tablespoon flour (20 g)
1 cup milk
120 g hard mozzarella cheese, grated
Instructions:
Cook the Pasta:
Bring a large pot of water to a boil.
Add 1 teaspoon of salt and a splash of olive oil.
Cook the pasta for 6-8 minutes, following the manufacturer’s instructions, until al dente.
Drain the pasta and set aside.
Prepare the Chicken and Vegetables:
Heat 3 tablespoons of olive oil in a large frying pan over medium heat.
Add the chopped onion and fry until it starts to become transparent.
Add the finely chopped garlic and fry for another 5 minutes over low heat.
Add the chicken pieces and cook until they are browned and cooked through.
Add the chopped tomatoes, salt, black pepper, and garlic leeks.
Cook until the tomatoes are soft and the mixture is well combined.
Prepare the Sauce:
In a separate saucepan, melt 2 tablespoons of butter over medium heat.
Add a pinch of salt.
Stir in 1 tablespoon of flour and cook for 1-2 minutes until it forms a paste.
Gradually add 1 cup of milk, stirring continuously to avoid lumps.
Cook over low heat until the sauce thickens.
Mix well and remove from heat.
Combine and Bake:
Preheat your oven to 180°C
In a large mixing bowl, combine the cooked pasta, chicken mixture, and white sauce. Mix well.
Transfer the mixture to a baking dish.
Top with the grated hard mozzarella cheese.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and golden brown.
Serve:
Remove from the oven and let it cool slightly.
