1 tbsp. oil
1 lb. medium shrimp, peeled and deveined
3 cups cooked white rice
2 cups frozen peas and carrots, defrosted
2 tbsp. soy sauce
2 tsp. sesame oil
1 large egg, whisked
2 tbsp. sliced green onions
Wash and rinse your shrimp and set them aside.
Cook your white rice as directed and set it aside.
Place a medium skillet over medium heat and add the oil and minced garlic. Stir for about 1 minute until the garlic is fragrant.
Add the peas and carrots mixture along with the shrimp to the sauté pan and toss to combine. Cook for 5 minutes.
In a small bowl, add your sesame oil and soy sauce, and stir to combine.
Stir in the cooked white rice and the soy sauce-sesame oil mixture. Sauté for an additional 4 minutes.
Push the rice-shrimp mixture to one side of the skillet. Add the whisked egg to the sauté pan and stir the egg constantly until it’s almost fully cooked, then fold it into the rice mixture.
Garnish with sliced green onions.
